Andros is the island where you can have a good time even in winter. Especially the autumn when the sea is magnificent. Anyone who goes there on September, after all, knows why it is one of the ideal months to escape. Frutalia Andros

Materials needed

  • 2 tablespoons olive oil
  • 300 g potatoes, boiled
  • Salt
  • Pepper
  • 200 g syglino
  • 6 eggs, medium
  • 1 tablespoons thyme
  • 50 g Milk
  • 200 g gruyere, grated

For serving you will need

  • 1 tablespoons thyme
  • 1 teaspoon olive oil

Implementation

Firstly, you preheat the oven to 180cin the air position as soon as you prepare the recipe. Place a frying pan over medium heat and add the olive oil. Then cut the potatoes into rounds and place them in the pan. Season them with salt and pepper and sauté for 1-2 minutes on each side until they will gain golden color.

Brush a 28 cm baking pan with olive oil. and make a layer of potatoes. Place the same pan on the heat. Then cut the syglino into 1 cm pieces. and put it in the pan. Sauté it for 1-2 minutes. Remove it from heat and place it over potatoes.

Then in a bowl break the eggs and add salt, pepper,&thyme, and mix the eggs. Add the milk, gruyere, and mix them.

You are almost done, put the baking pan in the oven with the rest of the ingredients and bake for 20-25 minutes Remove and serve with thyme and olive oil.
